Bourbon Balls

Ingredients

  • 2 cups pound cake cubed
  • 1 cup pecans toasted
  • 1 cup confectioners' sugar plus extra for rolling
  • 1-2 tbsp bourbon
  • cocoa for coating

Instructions

  • In a food processor, combine 2 cups pound cake, 1 cup pecans and 1 cup confectioners' sugar. Pulse several times to mix well.
  • Add 1-2 tbsp bourbon, a little at a time, just until moistened and it forms a soft, pliable dough.
  • Turn out dough onto work surface lightly dusted with confectioners' sugar.
  • Dust your hands lightly with confectioners' suger, pull off walnut-sized pieces and roll them between your palms to form compact balls.
  • Roll them in cocoa.
